May is Celiac Awareness Month

Celiac Disease is an autoimmune disease, which is triggered by gluten. Gluten is a protein found in wheat, rye, and barley. In the United States, 1 in 133 people have celiac disease, but many remain undiagnosed. The only treatment for celiac disease is a strict gluten free diet. Our ebook platforms (Hoopla, Overdrive, Cloud Library) have many different cookbooks for cooking gluten free. The key to being gluten-free, is to read labels very carefully. Being on a gluten-free diet can be challenging, as one who has been on it for seven years, I understand. Below is a recipe I recently found for Chicken Cordon Bleu Casserole. This recipe can be modified for dairy free too.
